College students are at greater risk for food insecurity than the general population, a University of Illinois study shows.

URBANA, Ill. ­– College students, especially first-generation and minority students, are more likely to experience food insecurity than the general population. This can contribute to social inequalities and make degree attainment more difficult for those students, University of Illinois researchers say.

What happens when the body cannot process beta carotene?

 

ISLAMABAD, (Online) - Two new studies in mice and humans suggest that some individuals may produce insufficient quantities of vitamin A from the beta carotene in their diets. To compensate, they may need to eat more foods containing vitamin A to maintain good cardiovascular health.

Beta carotene is a pigment in all fruits and vegetables, and carrots and sweet potatoes are particularly rich sources.
