Congratulations to the ACES Global Food Security Interns for Fall 2023

The College of ACES Office of International Programs supports talented and motivated ACES undergraduate students to pursue work related to food and nutritional security in low- and middle-income countries through the Global Food Security Interns program.

As part of this annual program, the students receive salary support for an on-campus internship for the fall semester and additional optional funds to support an associated international travel experience.

ACES 2023-24 Global Academy focuses on building partnerships in France

Nine faculty and staff from the College of Agricultural, Environmental and Consumer Sciences (ACES) have been selected for the 2023-2024 ACES Global Academy that will focus on building ties with French collaborators towards sustainable solutions for climate change, agriculture, household wellbeing, and global food system resiliency.

The year-long program will include a series of on-campus seminars, roundtable discussions, and a capstone visit to selected partner institutions in France.

FSHN students win second place with “Churroats” in food science competition

URBANA, Ill. — A student team from the Department of Food Science and Human Nutrition (FSHN) at the University of Illinois Urbana-Champaign took second place in the Institute for Food Technologist’s (IFT) Student Association & Mars Product Development Competition in July. Their winning product was “Churroats,” a churro made from upcycled oat pulp.

New grant to optimize gut microbes, boost health benefits of broccoli

URBANA, Ill. — Love it or hate it, broccoli is chock-full of health-promoting chemicals linked to heart health, cancer prevention, immune function, weight management, and more. However,  some people are less efficient than others at unlocking those chemical benefits. A research team at the University of Illinois Urbana-Champaign suggests gut microbe communities may be responsible for the variation.

Could soil microplastics introduce resistant superbugs to the food supply?

URBANA, Ill. — Like every industry, modern farming relies heavily on plastics. Think plastic mulch lining vegetable beds, PVC pipes draining water from fields, polyethylene covering high tunnels, and plastic seed, fertilizer, and herbicide packaging, to name a few. In a new review article, University of Illinois Urbana-Champaign researchers say these plastics are now widely dispersed in agricultural soils in the form of microplastics and nanoplastics.

A new study from the University of Illinois Urbana-Champaign looks at maternal and infant sleep patterns, identifying predictors and providing recommendations for instilling healthy habits.
