Biographical Sketch

Dr. Youngsoo Lee graduated with a B.S. in Food Engineering at the Yonsei University in Seoul, Korea in 1996. He received his Ph.D. in Food Science with emphasis on Food Process/Engineering at the University of California, Davis in 2001. Dr. Youngsoo Lee’s research focus is investigating physico-chemical characteristics of food systems with emphasis on understanding rheological and textural properties, as it is the first critical evaluative step for newly developed foods. In addition, Dr. Lee is interested in developing value added/functional food products that can be further optimized and commercialized by collaborative efforts with food companies. He is currently conducting a study on new/improved soy product development which can aid in weight loss and control. He also has extensive expertise on various pilot plant equipment which he uses to teach, research, and consult. Dr. Youngsoo Lee has a daughter named Jenna who he loves to kid around with, and a wife, Dr. Soo-Yeun Lee who also works in the same department.
