Biographical Sketch

Dr. Erdman received all of his training in Food Science from Rutgers University. Following his Ph.D. in 1975, he joined the UIUC Department of Food Science as Assistant Professor. He has risen through the ranks and is currently Professor of Food Science and Human Nutrition. He also holds the Nutrition Research Chair sponsored by Mars, Inc. He also has appointments in the Medical School and the Division of Nutritional Sciences. He served as Director of the Division of Nutritional Sciences from 1989-1999 and was Assistant Dean in the College's Office of Research from 1995-1999. Dr. Erdman has more than 150 peer-reviewed publications, primarily centered upon the effects of food processing upon the bioavailability of minerals and carotenoids from foods and health aspects of soy protein. More recently, his laboratory has expanded its studies into the metabolism of carotenoids and the effects of carotenoids on prostate cancer using animal models. Dr. Erdman has received several national awards for teaching and research from professional societies such as the American Society of Nutritional Sciences and the Institute of Food Technologists, most recently the Babcock-Hart award in 1999. He is a Fellow of IFT and AHA. He served from 1991-1999 on the Food and Nutrition Board of the Institute of Medicine (IOM), National Academy of Sciences. He is past Chair of the standing committee on the scientific evaluation of the DRI and is chair of the committee on military nutrition research for the IOM. He is quite involved with the revisions of the RDA's. In 2001-2002 he served as President of the American Association for Nutritional Sciences. Dr. Erdman and his wife Edie live in Urbana. They have two daughters, Carolyn and Jackie. Dr. Erdman enjoys golf, fishing and Illini sports.
