Biographical Sketch

Arthur J. Siedler received his B.S. in Biochemistry from the University of Wisconsin in 1951 and an M.S. and Ph.D. in Biochemistry from the University of Chicago in 1956 and 1959, respectively. He was employed at the American Meat Institute Foundation at the University of Chicago where he served as Chief of their Division of Biochemistry and Nutrition and as an Assistant Professor of Biochemistry from 1963 to 1964. Dr. Siedler was employed at Norwich Pharmacal Company as Chief of the Physiology Section from 1965 to 1969 and the Biochemistry Section from 1969 to 1972. In 1972, he joined the faculty of the University of Illinois as Professor and Head of the Department of Food Science; he remained in that position until 1989 and as Professor until 1994. He held joint appointments in the Division of Nutritional Sciences and the College of Medicine, and he currently holds Emeritus status in the Department of Food Science and Human Nutrition. Dr. Siedler is a member of several professional societies, including the American Chemical Society, American Society of Nutritional Sciences and Institute of Food Technologists (Fellow). He is past President of the Illinois Chapter of Gamma Sigma Delta and Past Chair of the Chicago Section of the Institute of Food Technologists. Dr. Siedler’s most recent teaching and research areas included food chemistry, particularly, food additives and anti-microbial agents.
